  • Unsweetened Cocoa Powder: 3/4 cup
  • Baking Powder: 1 1/2 teaspoons
  • Baking Soda: 1 1/2 teaspoons
  • Salt: 1 teaspoon
  • Eggs: 2, large
  • Milk: 1 cup
  • Vegetable Oil: 1/2 cup
  • Vanilla Extract: 2 teaspoons
  • Boiling Water: 1 cup
For the Fudge Frosting:
  • Butter: 1 cup, softened
  • Unsweetened Cocoa Powder: 1 1/2 cups
  • Powdered Sugar: 5 cups
  • Milk: 2/3 cup
  • Vanilla Extract: 1 teaspoon

Instructions

Making the Cake:
  1. Preheat Oven and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Dry Ingredients: In a large bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add Wet Ingredients: Add eggs, milk, oil, and vanilla to the flour mixture and mix together on medium speed until well combined.
  4. Incorporate Boiling Water: Reduce the mixer speed and carefully add boiling water to the cake batter. Once mixed, the batter will be thin.
  5. Bake: Pour the batter evenly into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool: Remove from the oven and allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
Making the Fudge Frosting:
  1. Combine Butter and Cocoa: In a large bowl, beat butter and cocoa powder together until smooth.
  2. Add Powdered Sugar and Milk: Gradually add powdered sugar and milk, beating on low speed until combined. Then, increase to high speed and beat until the frosting is light and fluffy.
  3. Add Vanilla: Stir in vanilla extract.
Assembling the Cake:
  1. Layer and Frost: When the cakes are completely cool, spread frosting on the top of one cake layer, place the second layer on top, and then frost the top and sides of the cake.
  2. Decorate: You can decorate with chocolate shavings, sprinkles, or leave it elegantly simple.
Tips and Variations
  • Coffee: For an enhanced chocolate flavor, replace boiling water with hot brewed coffee.
  • Buttermilk: Substitute milk with buttermilk for a richer taste.
  • Cupcakes: This batter can also be used to make cupcakes. Just adjust the baking time accordingly.
